This was a family favorite when I was growing up, and was the number one meal I always requested for my birthday….even as an adult. It seems fitting to feature this delicious meal for all the warm fuzzy nostalgic memories that I have around this stew slowly simmering on a cold fall day. It’s so good, and it just makes any ordinary day feel better.
This easy flavorful beef stew produces a delicious simple meal in just a few hours, most of which is just simmering the meat to a perfect tenderness in your dutch oven. Add the veggies and simmer a little longer, and you have a hearty meal that everyone will be lining up to eat!
All the ingredients you need:
- Boneless beef stew meat
- Worcestershire sauce
- Garlic
- Onion
- Bay leaf
- Salt
- Pepper
- Carrots
- Potatoes
Make the beef base
Using a large dutch oven on the stovetop, brown the beef in 2 TBS of butter. Coarsely chop the onions into small slices and add them to the dutch oven with garlic, Worcestershire sauce, bay leaf, and salt and pepper. Simmer on low heat for 2 hrs for tenderness. Your house will now smell fantastic.

I just love my antique dutch oven! The spikes inside the lid pop any bubbles and keep it from overflowing!!

Adding vegetables
Chop potatoes into 1-inch cubes and add to the beef base. Peel carrots and chop into bite size chunks, about 1/2 inch thick and 1 inch long. Add these to the beef base as well. Increase heat to medium and cook until vegetables are tender, about 30 min.

Enjoy!

Ladle this into your favorite chunky soup bowl (here’s my absolute favorite potter for all my best soup bowls!! https://curatedceramics.com/willem-gebben/) Serve fresh and hot off the stove. It makes fantastic leftovers but you may need to add a bit more liquid the next day as the potatoes soak it up. Salt and pepper to taste after. I like it with more liquid like a soup, but it can be made very thick like a traditional stew also. It’s purely preference.
My favorite thing with stews and soups, and ESPECIALLY this rich hearty boneless beef stew meat recipe, is a vehicle for dunking fresh hot crusty bread with butter!!! This is great with a hot ciabatta loaf or this great easy skillet bread! https://bakerbettie.com/easy-no-knead-skillet-bread/
