Grandma's Best Butter Crumble Date Bars

Date Filling
- 2 C chopped and pitted dates
- 3/4 C water
- 1/8 tsp salt
- 2 TBSP lemon juice
- 1/2 C chopped nuts pecans or walnuts, optional
Butter Crumble Crust
- 1 3/4 C raw uncooked oatmeal
- 1 1/2 C flour
- 1/2 C brown sugar
- 1/2 C chopped nuts pecans or walnuts, optional
- 1 tsp baking soda
- 1/2 tsp salt
- 3/4 C salted butter chilled
Date Filling
Cook dates in water until soft
Add granulated sugar, salt, and lemon juice
Cook and stir until thickened
Add chopped nuts, cool
Butter Crumble Crust
Mix oatmeal, flour, sugar, baking soda, and salt in large mixing bowl
Cut in chilled butter
Mix with pastry cutter and/or fingers until mixture resembles coarse crumbs
Press half the crumble mixture into greased 9x13 glass baking pan
Drop filling in spoonfuls evenly distributed over unbaked crumble, spread gently
Top with remaining crumble mixture
Bake at 375F for 35 minutes (depending on oven)
