- 1/2 C butter
- 1/2 C brown sugar
- 1 large egg
- 1/3 C milk
- 1 tsp orange or lemon juice optional
- 2 1/2 C Flour white or half and half with whole wheat
- 1 tsp baking soda
- 1 tsp cinnamon
- 1 tsp ginger
- 1/4 tsp cloves
- 1/4 tsp salt
- 1/2 C granulated sugar for rolling the dough in
Honey Cream Cheese Filling
- 8 oz cream cheese
- 2 TBSP honey
- 1/2 tsp vanilla
- 1/4 tsp lemon extract
- 1 1/2 C powdered sugar more or less for desired thickness
Soft Ginger Cookies
In a large mixing bowl, cream together butter and brown sugar
Beat in egg and molasses
Add dry ingredients, alternating with milk (dough is sticky)
Using a cookie scoop or spoon, drop balls of dough into the granulated sugar and roll until covered
Place on cookie sheet and bake 7-9 min at 350F. Cool before filling.
Honey Cream Cheese Filling
Blend cream cheese and honey until well mixed and creamy
Add vanilla and lemon extract
Mix in powdered sugar to desired thickness/taste
Add a layer of thick honey cream cheese filling between two cooled cookies
